first beet harvest

sweety stopped by the garden plot to thin out the beets and came home with THIS crop! what to do, what to do. any good beet recipes? besides pickled beets, how can I put them up?

I read the other day in the NYTimes that fresh beet is super, duper healthy. they recommended shaving it over salad greens without any cooking at all! Worth a shot with a crop like that.

Wow- they look great. We often do a beet and pasta dish, you just saute up the beets with a lot of garlic in small chucks then just before the pasta is done add the beets (so the pasta soaks up the juices and turns red) serve with lots of fresh parsley and parmesean.Its surprisingly good for being so simple). Bet the silver spoon has some good ideas.

we love 'em roasted and then smothered in this:

2/3 C. canola oil
3-4 T. lime juice
2 T. fresh curry powder
2 T. freshly grated ginger
1 t. coriander
1 t. sea salt

serve over fresh spinach wtih walnuts and raisins and you've got a great meal. maybe goat cheese crostini on the side?
